Handpicked grapes are gently pressed. Natural fermentation on wild yeasts lasts for 15 days at a controlled temperature. The wine rests for at least 8 months to reach the maximum aromatic complexity.

Tasting note
Pale straw yellow with greenish hues. Complex bouquet with floral notes of acacia, gentian and white rose. Aromas of white peach, Renetta apple and pear. On the palate juicy and fresh, clean fruit over a hint of stony minerality, wrapped up with a high note of fresh-fruit acidity.

Serving suggestions
Ribolla Gialla with its zesty and refreshing acidity pairs really well with fresh vegetables, raw fish and lighter meals. Fish and shellfish are classic pairing partners of this wine.
