Ribolla gialla

The grapes are collected in boxes and lightly pressed and undergo the cold static settling process. Fermentation takes place in steel tanks at a controlled temperature of 16°-17°. Second fermentation with Charmat method in stainless steel at 14-15 C°. A settling period in bottles follows.

Tasting note
Star-bright straw yellow with greenish reflections and persistent perlage of tiny bubbles. Rich and intense aromas, emerge fruity of ripe Renette apple and a stony minerality. Fresh and zesty with a well-balanced acidity, it has good persistence, with a dry and pleasant finish.
